Villa Papiano is one of the emerging estates in Emilia-Romagna, established by the Bordini family on the site of a 14th century villa in the mountains southeast of Bologna / northeast of Firenze, next door to the Chianti Rufina region on the Tuscan side of the hills. Organically farmed, at 550 meters above sea level, Villa Papiano boasts the highest vineyards in the region.
Sangiovese is the great red grape variety, virtually synonymous with the world-famous red wines of Tuscany, which is labelled in the Emilia-Romagna region as Sangiovese di Romagna. It is a relatively slow ripening grape variety, which results in an extended growing season and richer, stronger and longer-lived wines than those made from early-ripening varieties. The ageing potential of I Probi di Papiano is 10-15 years or more.
Deep red in colour, delicately spiced nose of cherries and plums, supple, with fine tannic structure and a mineral finish. Aged for 12 months in French oak barrels (50% in large casks, 50% in 5hl tonneaux), followed by at least 12 months in bottle.
I Probi di Papiano 2013 has scooped the Tre Bicchieri award by Gambero Rosso (generally accepted as the most authoritative guide to Italian wines).
The best food pairings for Sangiovese wines include pasta with rabbit ragù, chicken liver and roasted pork.
