Pappa al pomodoro is one of the most traditional dishes of Toscana. In the past, it was considered a farmer’s dish: the soup was made out of leftover bread so as not to waste anything, simply flavoured with tomatoes, garlic and olive oil. In the sixties, the Italian singer Rita Pavone dedicated a song to this celebrated dish - “Viva la pappa col pomodoro” - that became famous all over Italy. To enjoy this local soup, pour it into a pan with a few drops of water (optional) and warm it up on low heat. Add a bit of extra-virgin olive oil, then play Rita Pavone’s song and serve it!
