Artisanal salame seasoned with wild fennel, sun-dried tomatoes stuffed with Mediterranean tuna and saffron cheese served with Zibibbo grape jelly.
Since ancient times local sheep’s milk has been combined with saffron grown in the area to make Piacentinu Ennese cheese.
The jelly, also called miele d’uva (grape honey), is made with Zibibbo grapes of Pantelleria, following an ancient recipe.
The salame comes from Chiaramonte Gulfi, a medieval town famous for its pigs raised in the carob tree groves.
Handmade Busiate pasta served with delicate almond & pistachio pesto
Busiate from the city of Trapani is a spiral-shaped pasta whose fame has not yet gone beyond its regional borders. It is a perfect match for the delicious almond & pistachio pesto, whose unique flavour is due to the famous pistachios of Bronte, exquisite Sicilian almonds, extra-virgin olive oil and a pinch of salt and pepper. So simple and so good!
Nerello Mascalese 2015, Benanti
Nerello Mascalese is a dark-skinned grape variety that grows on the volcanic slopes of Mount Etna in Sicily. The variety takes its name from the Mascali plain, between Mount Etna and the coast, where it is thought to have originated.
Nocino
The most exquisite Sicilian walnuts and almonds combined with delicate dark chocolate to create a delicious blend of artisanal flavours.
In Piedmont, everything turns into flavour, from the cheese or the precious meats to the grapes which are transformed into renowned wines such as Barolo, Barbaresco and Barbera.
